Even though Nicole Ruby intends to come to la Croisette regularly, she has passed the reins of her Cannes restaurant over to Bertrand Schmitt, Head Chef at the Hôtel Majestic Barrière. As a true lover of Mediterranean produce, Bertrand is delighted with his new responsibilities.

His passion for Southern cuisine has not dwindled in twenty years, which is not surprising considering he learned everything alongside a master, Roger Vergé, who was a mentor at the Moulin de Mougins.
